The Umami Breed
In the United States we have been very careful to select the most elite Wagyu farm who raises the very best cattle in the country, exclusively for The Olive Feed Corporation. Umami may be raised in the United States, but it is not “American Wagyu” as is the traditional term used for Wagyu produced in America.

The Umami line are always 100% Fullblood Tajima Black Wagyu. This means both father and mother of the animal are 100% Fullblood Tajima Black, and the grandfather and grandmother and the great grandfather and great grandmother and so on.

For 30 years since Japan opened its door to export its Tajima Black genetics, semen, and embryo transfer have allowed this magical breed of cattle to be produced around the world. By inseminating cattle with the fertilized embryo’s from Fullblood Tajima Black cattle, surrogates are able to carry calves and begin production of a farm’s own herd of Fullbood Tajima Black cattle.

This takes both huge investment and care from a farmer with almost ten years of work before the plan can come to fruition and produce a consistent monthly production of more than a few heads a month. For this reason, it is very rare to find 100% Fullblood Tajima Black in America.

With the Tajima Breed of Wagyu, low stress and a calm serene environment are crucial in order to maximize meat quality and marbling. Traditional methods of cattle raising will not yield good results with Wagyu marbling, and so the Umami Wagyu is cared for individually like children and raised in the most beautiful and stress-free environment possible.

Our Umami Ranch is in East Texas, where the pristine landscape and incredible ecosystem provide the ideal rearing grounds. The cattle are raised by the infamous Wagyu Whisperer Ryan Bagley.

Umami cattle are all hormone and antibiotic-free. They drink water that has been filtered through a purification system to remove any traces of chemicals the local drinking water contains.

The Olive Feed Corporation invented a process to transform the waste of Olive Oil production into animal feed. For almost 100 years companies had been trying to use olive waste as an animal feed, but found it to be unpalatable, unsafe because of high tannin content and with very low digestibility also because of tannin content.

Our patented process solves all 3 of these problems allowing our animals to enjoy an incredible taste and nutritious feed, they give their meat an incredibly unique flavor.

Our Olive Feed goes all over the globe to the world’s best farms where we have won a number of awards for producing the best meat in the country.

The secret to Olive Feed is that it changes the nutritional profile of the meat and fat. Oleic Acid increases, lowering the melting point of the fat. Glutamic Acid increases improving the flavour and umami of the meat. Monounsaturated fat ratios increase giving a lighter eating experience and there are a number of nutritional and health benefits including high increases in Carnosine.

The Olive Feed Corporation is the only company in the world that performs this transformation of Olive waste into animal feed. Beware of other companies selling untreated waste, or waste that has been cooked by industrial dryers at temperatures that make it carcinogenic.
